- 1 cup rolled oats
- 1 cup flour

- 2 large eggs

- 2 cups grated carrots
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
- In a large bowl, mix the rolled oats, flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the sugar, brown sugar, oil, eggs, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the grated carrots and nuts, if using.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
