A delightful winter brunch dish featuring a warm custard-like interior and a crisp caramelized top, perfect for slow mornings and small celebrations.

  • Total Time: 45 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 2 cups pancake mix
  • 1 cup eggnog
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup maple syrup (optional for serving)
  • Powdered sugar (optional for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mix together the pancake mix, eggnog, milk, eggs, vanilla extract, nutmeg, and cinnamon until just combined.
  3. Pour the batter into the greased baking dish.
  4. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  5. Let it cool slightly before serving. Serve warm with maple syrup and powdered sugar if desired.

Notes

Start with room-temperature eggs for smooth batter blending. A light butter coating on the pan promotes even browning.
