- 8 oz sharp cheddar cheese, shredded
- 4 oz cream cheese, softened
- 1/2 cup pimentos, diced
- 1/4 cup green onions, sliced
- 1 tsp garlic powder
- Salt & pepper to taste
- 1 cup chopped nuts or breadcrumbs (for coating)
Instructions
- In a mixing bowl, combine the shredded cheddar cheese, softened cream cheese, diced pimentos, sliced green onions, and garlic powder.
- Season the mixture with salt and pepper to taste, then mix until well combined.
- Using your hands, scoop out small portions of the mixture and roll them into balls, about 1 inch in diameter.
- Roll each ball into the chopped nuts or breadcrumbs to coat it evenly.
- Place the coated cheese balls on a baking sheet lined with parchment paper.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For a healthier option, consider using low-fat cream cheese or a dairy-free cheese. They last in the fridge for up to a week.
