Foolproof No-Cook Divinity Candy

A quick and easy version of the classic Divinity Candy that is light, airy, and perfect for any festive occasion.

Ingredients

  • 2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • Chopped nuts (optional)

Instructions

  1. In a saucepan, combine sugar and corn syrup, and cook over medium heat until it reaches a soft ball stage (around 240°F).
  2. While the syrup is cooking, beat egg whites in a mixing bowl until stiff peaks form.
  3. Once the syrup is ready, slowly pour it over the beaten egg whites while continuously mixing.
  4. Add vanilla extract and nuts (if using), and mix until the candy is thick and glossy.
  5. Drop spoonfuls of the mixture onto wax paper and let cool until set.

Notes

Store in an airtight container in a cool, dry place for up to one week. Avoid making it on a humid day for best results.
