- 2 cups granulated sugar
- 1/2 cup light corn syrup
- 2 egg whites
- 1 teaspoon vanilla extract
- Chopped nuts (optional)
Instructions
- In a saucepan, combine sugar and corn syrup, and cook over medium heat until it reaches a soft ball stage (around 240°F).
- While the syrup is cooking, beat egg whites in a mixing bowl until stiff peaks form.
- Once the syrup is ready, slowly pour it over the beaten egg whites while continuously mixing.
- Add vanilla extract and nuts (if using), and mix until the candy is thick and glossy.
- Drop spoonfuls of the mixture onto wax paper and let cool until set.
Notes
Store in an airtight container in a cool, dry place for up to one week. Avoid making it on a humid day for best results.
