- 2 cups corn (canned or frozen)
- 1 cup Fritos corn chips
- 1 cup diced bell peppers (any color)
- 1/2 cup red onion, diced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup mayonnaise
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the corn, Fritos, bell peppers, red onion, and cheese.
- In a separate bowl, mix together the mayonnaise, lime juice, salt, and pepper.
- Pour the dressing over the salad mixture and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
Add chips just before serving to maintain their crunch. Adjust dressing for seasoning after chilling.
