Instructions
- Prepare the Chicken: Heat butter and olive oil in a large skillet over medium heat. Season the chicken pieces with salt and pepper. Add them to the skillet with minced garlic. Cook for 7-10 minutes, stirring occasionally, until golden brown and fully cooked. Remove from the skillet, set aside, and keep warm.
- Make the Parmesan Cream Sauce: In the same skillet, add the heavy cream, Parmesan cheese, garlic powder, onion powder, and Italian seasoning. Stir and bring the sauce to a gentle simmer. Cook for about 5 minutes, or until thickened. Taste and adjust seasoning with salt and pepper.
- Prepare the Cheesy Roasted Potatoes: Preheat the oven to 400°F (200°C). In a bowl, toss the cubed potatoes with olive oil, garlic powder, parsley, salt, and pepper. Spread the potatoes evenly on a baking sheet. Roast for 25-30 minutes, or until golden and crispy, flipping halfway through. Sprinkle shredded cheddar and grated Parmesan cheese over the roasted potatoes. Return them to the oven for an additional 5 minutes, or until the cheese melts.
- Assemble the Dish: Pour the Parmesan cream sauce over the chicken bites, ensuring they are evenly coated. Garnish with fresh parsley. Serve the creamy chicken bites alongside the cheesy roasted potatoes for a perfect pairing.
