  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp Italian seasoning
  • 4 medium potatoes, cubed
  • 2 tbsp olive oil
  • 1 cup shredded cheddar cheese
  • 1 tbsp garlic powder
  • 1 tbsp parsley

Instructions

  1. Prepare the Chicken: Heat butter and olive oil in a large skillet over medium heat. Season the chicken pieces with salt and pepper. Add them to the skillet with minced garlic. Cook for 7-10 minutes, stirring occasionally, until golden brown and fully cooked. Remove from the skillet, set aside, and keep warm.
  2. Make the Parmesan Cream Sauce: In the same skillet, add the heavy cream, Parmesan cheese, garlic powder, onion powder, and Italian seasoning. Stir and bring the sauce to a gentle simmer. Cook for about 5 minutes, or until thickened. Taste and adjust seasoning with salt and pepper.
  3. Prepare the Cheesy Roasted Potatoes: Preheat the oven to 400°F (200°C). In a bowl, toss the cubed potatoes with olive oil, garlic powder, parsley, salt, and pepper. Spread the potatoes evenly on a baking sheet. Roast for 25-30 minutes, or until golden and crispy, flipping halfway through. Sprinkle shredded cheddar and grated Parmesan cheese over the roasted potatoes. Return them to the oven for an additional 5 minutes, or until the cheese melts.
  4. Assemble the Dish: Pour the Parmesan cream sauce over the chicken bites, ensuring they are evenly coated. Garnish with fresh parsley. Serve the creamy chicken bites alongside the cheesy roasted potatoes for a perfect pairing.

Notes

Salt early and taste late; this ensures layers of flavor without over-salting. Keep the heat low while thickening the cream, and add a splash of water or milk if the sauce gets too thick.
