Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 egg
  • 1/4 cup chopped parsley
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese (for topping)
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix ground chicken, breadcrumbs, Parmesan cheese, minced garlic, egg, parsley, salt, and pepper until well combined.
  3. Shape the mixture into a loaf and place it in a greased baking dish.
  4. Drizzle with olive oil and bake for 30-35 minutes.
  5. During the last 10 minutes of baking, sprinkle mozzarella cheese on top and return to the oven until melted and bubbly.
  6. Let it rest for a few minutes before slicing. Serve warm.
