Ingredients

  • 1 packet active dry yeast
  • 1 tablespoon granulated sugar
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup baking soda
  • 1/4 cup unsalted butter, melted
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Coarse sea salt for topping

Instructions

  1. In a bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy.
  2. Add flour and salt, mixing until a dough forms. Knead for about 5 minutes, then let it rise for an hour.
  3. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Roll the dough into small balls. In a separate pot, boil water and baking soda, then dip each pretzel bite into the solution for 30 seconds.
  5. Place on the baking sheet, brush with melted butter, and sprinkle with garlic and Parmesan.
  6. Bake for 12-15 minutes or until golden brown.
  7. Serve warm and enjoy!

Notes

For a dairy-free option, substitute butter with margarine and use a lactose-free cheese. Watch the browning of the Parmesan closely to avoid burning.
