Ingredients
1.5 lbs boneless skinless chicken breasts, cut into cubes
1/2 cup ranch dressing
2 cloves garlic, minced
1/3 cup grated Parmesan cheese
1 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika (optional)
Wooden or metal skewers
Instructions
1. In a large bowl or zip-top bag, combine ranch dressing, minced garlic, olive oil, salt, pepper, and paprika.
2. Add chicken cubes and toss to coat. Marinate in the fridge for at least 30 minutes or up to overnight.
3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
4. Thread the marinated chicken onto skewers evenly.
5. Preheat grill to medium-high heat, or set air fryer to 375°F.
6. Grill for 10–12 minutes, turning every few minutes, until the chicken is golden and cooked through (165°F internal temp). For air fryer: cook for 12–15 minutes, flipping halfway.
7. Sprinkle Parmesan cheese on top during the last few minutes of cooking for a crispy finish.
8. Serve hot with your favorite sides or salads.
Notes
You can prep the chicken the night before and skewer right before cooking.
Air fryer tip: don’t overcrowd the basket for even crisping.
Pairs beautifully with cucumber salad, garlic mashed potatoes, or grilled veggies.
