Delightful Halloween treats made from popcorn coated in sweet marshmallow goodness and decorated with candy eyes.

Ingredients

  • 6 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1 cup mini marshmallows
  • 1/4 cup unsalted butter
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Candy eyes for decoration

Instructions

  1. In a large pot, melt the butter over medium heat. Add the sugar and salt, stirring until combined.
  2. Add the marshmallows and continue stirring until melted and smooth. Remove from heat and stir in the vanilla extract.
  3. Pour the warm marshmallow mixture over the popped popcorn, mixing well to coat all kernels.
  4. Allow the mixture to cool slightly. Grease your hands and form the popcorn into balls.
  5. Place candy eyes on each ball before they set completely.
  6. Let the popcorn balls cool completely on wax paper before serving.

Notes

Butter your hands to prevent the mixture from sticking while shaping. Use fresh popcorn for best results.
