  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 1 cup powdered sugar (for glazing)
  • 2 tablespoons milk (for glazing)
  • 1/2 teaspoon vanilla extract (for glazing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a separate large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and pumpkin puree until well combined.
  5. Gradually add the flour mixture to the wet ingredients and mix until just combined.
  6. Drop tablespoon-sized portions of dough onto a parchment-lined baking sheet.
  7. Bake for 10-12 minutes or until cookies are lightly golden around the edges. Let cool.
  8. For the glaze, mix powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled cookies and let set before serving.

Notes

Use room temperature ingredients for better incorporation. Don’t overmix the dough and allow cookies to cool completely before glazing.
