A comforting and refined gluten-free bread made with mashed potatoes for moisture and softness, featuring a crispy crust and silky interior.

  • Total Time: 55 minutes
  • Yield: 1 loaf 1x

Ingredients

Scale
  • 2 cups mashed potatoes
  • 1 1/2 cups gluten-free all-purpose flour
  • 1/2 cup warm water
  • 2 tablespoons olive oil
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 teaspoons active dry yeast
  • 1/2 teaspoon baking powder

Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. In a mixing bowl, combine the mashed potatoes, gluten-free flour, salt, and baking powder.
  3. Add the yeast mixture and olive oil to the dry ingredients. Mix until it forms a dough.
  4. Let the dough rest for 30 minutes in a warm place.
  5. Preheat the oven to 375°F (190°C).
  6. Shape the dough into a loaf and place it in a greased loaf pan.
  7. Bake for 30-35 minutes or until golden brown and a toothpick comes out clean.
  8. Allow to cool before slicing.

Notes

For best results, let the loaf cool fully before slicing to preserve its internal steam and structure. Serve with a sprinkle of flaky salt or cultured butter.
