Ingredients

  • 4 ripe but firm pears, halved and cored
  • 1 cup feta cheese, crumbled
  • 1/2 cup dried cranberries
  • 1/4 cup honey (plus extra for drizzling)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Halve and core the pears, and arrange them on a baking sheet lined with parchment paper.
  3. Drizzle olive oil over the pears and season with salt and pepper.
  4. Roast the pears for about 20 to 25 minutes or until tender and golden.
  5. While the pears are baking, blend the feta cheese and honey in a food processor until smooth and creamy.
  6. Once the pears are done, remove them from the oven and spoon the whipped feta onto each half, then sprinkle with dried cranberries and drizzle more honey over the top.

Notes

Use firm pears like Bosc or Anjou for the best results. Feel free to customize by adding nuts or using different cheeses.
