- 1 1/2 cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted

- 16 oz cream cheese, softened
- 3/4 cup honey
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press mixture into the bottom of a springform pan.
- Beat softened cream cheese until smooth, then gradually add honey and granulated sugar.
- Add eggs one at a time, mixing thoroughly after each addition and then stir in vanilla extract.
- Gradually incorporate heavy cream into the mixture and beat until smooth.
- Pour the cheesecake batter over the crust and bake for 50-60 minutes until the edges are firm and the center is slightly jiggly.
- Let cool in the oven for 1 hour before refrigerating for at least 4 hours or overnight.
- Garnish with sugar blossoms before serving.
Notes
Ensure cream cheese is at room temperature for easier blending. Use a water bath during baking for a creamier texture.
