Ingredients

  • 1 cup unsalted butter, melted
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup crushed pistachios
  • 1/2 cup cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cake pan.
  2. In a mixing bowl, combine melted butter and sugar until well blended.
  3. Add eggs, one at a time, mixing well after each. Stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  5. Fold in crushed pistachios.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting, beat the softened cream cheese and powdered sugar until smooth.
  10. Once the cake is cooled, spread the cream cheese frosting on top and garnish with additional crushed pistachios if desired.
  11. Serve and enjoy!

Notes

Use room temperature eggs and melt butter gently to avoid burning.
