  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup cooked white rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/2 cup tzatziki sauce
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, chopped parsley, Parmesan cheese, garlic powder, oregano, cumin, cinnamon, salt, and pepper.
  3. Mix until evenly combined.
  4. Shape the mixture into small meatballs, about 1 to 1.5 inches in diameter.
  5. Place the meatballs on a baking sheet lined with parchment paper.
  6. Drizzle olive oil over the meatballs.
  7. Bake for 15-20 minutes, until cooked through and lightly browned.
  8. Prepare the rice according to package instructions.
  9. In a medium bowl, combine cherry tomatoes, cucumber, red onion, and Kalamata olives; toss to mix.
  10. Once the meatballs are done, allow to rest for a few minutes.
  11. Assemble the bowls by placing rice, the vegetable mixture, and meatballs into each bowl.
  12. Drizzle with tzatziki sauce and finish with lemon juice.
  13. Serve immediately.
