- 1 pound ground turkey
- 1 cup cottage cheese
- 2 cups spinach (fresh or frozen)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup diced tomatoes (canned or fresh)
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until onions are translucent.
- Add ground turkey to the skillet and cook until browned. Season with salt, pepper, and Italian seasoning.
- Stir in spinach and cook until wilted.
- In a baking dish, layer the cooked turkey mixture, cottage cheese, diced tomatoes, and mozzarella cheese.
- Sprinkle Parmesan cheese on top.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
For a fresh twist, consider adding lemon zest to the cottage cheese or sprinkle toasted pine nuts atop the Parmesan.
