Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large sheet pan, arrange the chicken breasts, seasoning them with salt, pepper, garlic powder, and Italian seasoning.
  3. Drizzle the veggies (zucchini, bell pepper, and cherry tomatoes) with olive oil and spread them around the chicken on the sheet pan.
  4. Bake in the preheated oven for about 20 minutes.
  5. Remove the sheet pan from the oven, pour marinara sauce over the chicken, and top with mozzarella and Parmesan cheese.
  6. Return to the oven and bake for an additional 10 minutes or until the chicken is cooked through and the cheese is bubbly and golden.
  7. Serve hot and enjoy your healthy Chicken Parmesan with roasted veggies!
