Instructions
- Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
- In a large mixing bowl, combine rolled oats, honey or maple syrup, nut butter, mashed banana, and vanilla extract.
- Stir in chopped nuts, dried fruits, cinnamon, and salt until well mixed.
- Spread the mixture evenly in the prepared baking dish and press down firmly.
- Bake for 25-30 minutes or until the edges start to turn golden.
- Allow to cool before slicing into bars.
- Store in an airtight container for up to a week.
