A flavorful homemade doner kebab recipe that brings the taste of Istanbul to your kitchen.

Ingredients

  • 450 grams ground lamb (or any ground meat)
  • 1 grated onion (food processed into a paste with 1 tsp water)
  • 3 garlic cloves, minced
  • 1 teaspoon salt
  • 1.5 teaspoons sweet paprika
  • 1 teaspoon oregano
  • 1/4 cup yogurt
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, add the ground meat along with all the other ingredients. Mix well until thoroughly combined.
  3. Divide the meat mixture in half for easier handling.
  4. Take a sheet of parchment paper and place one half of the mixture in the middle.
  5. Carefully press and spread the meat into a thin, even rectangle.
  6. Roll the parchment over the meat from the long side until you reach the end, forming a flat roll.
  7. Repeat this step with the second portion of meat.
  8. Place the rolled meat on a baking sheet and bake in the oven for about 40 minutes or until cooked through.
  9. Once cooked, let cool slightly, then carefully unroll and break the meat apart.
  10. Squeeze fresh lemon juice over the top and pop it back in the oven until lightly golden and slightly crisp.
  11. Serve your doner kebab in a pita or bowl topped with lettuce, pickles, tomatoes, red onion, and your choice of garlic sauce.
