These cranberry bliss bars feature a tender, buttery blond base topped with creamy frosting and chewy cranberries, perfect for a cozy afternoon treat.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup dried cranberries
  • 1 cup white chocolate chips
  • 1/2 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 cup dried cranberries (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add it to the creamed mixture.
  5. Fold in the dried cranberries and white chocolate chips.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. While the bars cool, prepare the frosting by beating together the cream cheese, powdered sugar, and vanilla extract until smooth.
  9. Once cooled, spread the frosting over the top and garnish with additional dried cranberries.
  10. Cut into bars and enjoy!

Notes

Store unfrosted bars at room temperature for up to two days, or refrigerate for up to four days. For longer storage, freeze unfrosted bars for up to one month.
