- 1 tablespoon sesame oil
- 4 cups coleslaw mix (cabbage and carrots)
- 2 green onions, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 cup soy sauce or coconut aminos
- 1 tablespoon rice vinegar
- Salt and pepper to taste
- Optional toppings: sesame seeds, additional green onions
Instructions
- In a large skillet, heat the sesame oil over medium heat.
- Add the ground chicken and cook until browned.
- Stir in the garlic and ginger, cooking for an additional minute until fragrant.
- Add the coleslaw mix and cook until tender, about 5 minutes.
- Pour in the soy sauce and rice vinegar, mixing well.
- Season with salt and pepper to taste.
- Serve hot, topped with sesame seeds and additional green onions if desired.
Notes
For a heartier texture, use ground turkey or plant-based crumbles. Store leftovers in an airtight container for up to three days.
