- 2 cups cooked pasta
- 1 cup corn kernels (fresh or frozen)
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/4 cup red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine cooked pasta, corn, bell pepper, cucumber, red onion, cherry tomatoes, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving. Enjoy!
Notes
Use pasta cooked to just shy of al dente for the best texture when chilled. Adjust salt as needed since cold foods require more seasoning.
