Instructions
- In a bowl, combine the cottage cheese, oats, honey (or maple syrup), lemon zest, lemon juice, protein powder, vanilla extract, and salt.
- Gently fold in the blueberries.
- Once mixed, use your hands to form the mixture into small bite-sized balls.
- Place the bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
