- 1 head of cabbage, chopped
- 1 onion, diced
- 2 carrots, sliced
- 3 cloves of garlic, minced
- 6 cups vegetable broth
- 1 lemon, juiced and zested
- 2 tablespoons fresh dill, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and carrots, and sauté for about 5 minutes until softened.
- Stir in minced garlic and cook for an additional minute.
- Add chopped cabbage and vegetable broth; bring to a boil.
- Reduce heat and let simmer for 20 minutes until cabbage is tender.
- Mix in lemon juice and zest, fresh dill, and season with salt and pepper.
- Serve warm and enjoy!
Notes
Always use fresh dill for the best flavor. Adjust lemon juice based on your taste preference.
