Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup diced cucumbers
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/4 cup parsley, chopped
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Whole wheat wraps or tortillas

Instructions

  1. In a large bowl, combine chickpeas, cucumbers, cherry tomatoes, red onion, and parsley.
  2. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Place a generous amount of the chickpea salad onto each wrap and roll tightly.
  5. Slice the wraps in half and serve immediately.
