Instructions
- In a large bowl, combine chickpeas, cucumbers, cherry tomatoes, red onion, and parsley.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Place a generous amount of the chickpea salad onto each wrap and roll tightly.
- Slice the wraps in half and serve immediately.
