- 1 1/2 pounds ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup whole milk
- 1 large egg
- 1 tablespoon Worcestershire sauce
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup ketchup
- 2 pounds potatoes, peeled and sliced
- 1/2 cup sour cream
- 1/4 cup whole milk
- 2 tablespoons unsalted butter
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper. Mix until well blended.
- Press the mixture evenly into the bottom of a greased 9×13-inch baking dish.
- Spread ketchup evenly over the top of the meatloaf layer.
- Bake for 25 minutes.
- Meanwhile, boil the potatoes in salted water for 15 minutes or until tender. Drain well.
- Mash potatoes with sour cream, milk, and butter until smooth. Season with salt and pepper to taste.
- Spread the mashed potatoes evenly over the baked meatloaf layer.
- Sprinkle cheddar cheese and chopped green onions on top.
- Return casserole to oven and bake for another 20 minutes, until cheese is melted and bubbly.
- Remove from oven and let rest for 10 minutes before serving.
Notes
For lighter options, use lean ground beef or ground turkey and low-fat dairy.
