- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups elbow macaroni
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot over medium heat, brown the ground beef. Drain excess grease and sauté the diced onion until tender, about 5 minutes.
- Add the minced garlic and cook for another minute.
- Pour in the beef broth and bring to a gentle boil.
- Add the elbow macaroni and cook according to package instructions (6 to 8 minutes).
- Stir in the diced tomatoes and bring back to a simmer.
- Reduce heat and mix in the cheddar cheese and milk until melted.
- Season with Worcestershire sauce, Italian seasoning, salt, and pepper to taste.
- Ladle into bowls and garnish with chopped parsley.
Notes
For a lighter version, use lean ground turkey or plant-based meat. Customize with additional vegetables for a nutrient boost.
