Ingredients

  • 8 oz plain goat cheese, softened
  • 2 medium beets, roasted and finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1/3 cup pistachios, finely chopped
  • Salt and black pepper to taste

Instructions

  1. In a mixing bowl, combine the softened goat cheese, roasted beets, olive oil, balsamic vinegar, parsley, chives, salt, and black pepper. Mix until well combined.
  2. With clean hands, shape the mixture into a log or any desired shape.
  3. Roll the log in the finely chopped pistachios, pressing gently to adhere the nuts to the cheese.
  4. Wrap the log in plastic wrap and refrigerate for at least 1 hour to allow it to firm up.
  5. Slice the log and serve it chilled as an appetizer with crackers or fresh bread.

Notes

You can roast your beets a day in advance and store them in the refrigerator. Feel free to experiment with different herbs for unique flavor variations.
