- 8 oz plain goat cheese, softened
- 2 medium beets, roasted and finely chopped
- 1 tablespoon olive oil
- 1 teaspoon balsamic vinegar
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh chives, finely chopped
- 1/3 cup pistachios, finely chopped
- Salt and black pepper to taste
Instructions
- In a mixing bowl, combine the softened goat cheese, roasted beets, olive oil, balsamic vinegar, parsley, chives, salt, and black pepper. Mix until well combined.
- With clean hands, shape the mixture into a log or any desired shape.
- Roll the log in the finely chopped pistachios, pressing gently to adhere the nuts to the cheese.
- Wrap the log in plastic wrap and refrigerate for at least 1 hour to allow it to firm up.
- Slice the log and serve it chilled as an appetizer with crackers or fresh bread.
Notes
You can roast your beets a day in advance and store them in the refrigerator. Feel free to experiment with different herbs for unique flavor variations.
