- 1 ripe mango, diced

Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the oats, baking powder, cinnamon, and salt.
- In another bowl, mix the coconut milk, yogurt, honey (or maple syrup), and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until combined.
- Fold in the diced mango and shredded coconut.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes, or until the top is golden and set.
