  • 3 tablespoons Maple Syrup (Substitution: Honey for a different sweetener)
  • 2 tablespoons Dijon Mustard (Substitution: Whole grain mustard for a chunkier texture)
  • 1 cup Quinoa or Brown Rice (Substitution: Cooked leafy greens for a lighter dish)
  • Fresh Herbs (Suggestion: Parsley or cilantro)

Instructions

  1. Preheat the oven to 200°C (400°F). Cut the sweet potatoes into even cubes and toss with 1 tablespoon of olive oil, salt, and pepper.
  2. Spread the sweet potatoes on a baking sheet, ensuring space for air circulation. Roast for 25-30 minutes, turning once.
  3. Meanwhile, mix the maple syrup, Dijon mustard, and garlic powder until smooth.
  4. Generously brush the chicken breasts with half of the glaze; place them on a separate baking sheet or next to the sweet potatoes if space permits.
  5. Roast the chicken for 20-25 minutes, or until it reaches an internal temperature of 74°C (165°F), brushing with the remaining glaze halfway through cooking.
  6. Cook quinoa or rice according to package instructions, seasoning simply with a touch of olive oil and salt.
  7. Let the chicken rest for 5 minutes before slicing; this keeps it juicy.
  8. Assemble the bowls with a base of quinoa, roasted sweet potatoes, sliced chicken drizzled with glaze, and fresh herbs on top.
