A colorful and comforting gratin featuring layers of earthy beets, sweet potatoes, and Gruyere cheese, drizzled with maple syrup.

Ingredients

  • 2 large beets, thinly sliced
  • 2 large golden sweet potatoes, thinly sliced
  • 2 large orange sweet potatoes/yams, thinly sliced
  • 3 tablespoons brown butter
  • 2 tablespoons maple syrup
  • 1 cup shredded Gruyere cheese
  • 1/3 cup crispy fried shallots
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, melt the brown butter until fragrant.
  3. In a baking dish, layer the sliced beets, golden sweet potatoes, and orange sweet potatoes/yams, seasoning lightly with salt and pepper between layers.
  4. Drizzle the layers generously with maple syrup.
  5. Top with shredded Gruyere cheese and crispy fried shallots.
  6. Cover with foil and bake for 40 minutes.
  7. Remove the foil and bake for an additional 20 minutes or until the top is golden and bubbly.
  8. Let cool for a few minutes before serving.

Notes

Slice vegetables evenly for even cooking. For a lighter version, consider using low-fat cheese.
