- 2 large beets, thinly sliced
- 2 large golden sweet potatoes, thinly sliced
- 2 large orange sweet potatoes/yams, thinly sliced
- 3 tablespoons brown butter
- 2 tablespoons maple syrup
- 1 cup shredded Gruyere cheese
- 1/3 cup crispy fried shallots
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, melt the brown butter until fragrant.
- In a baking dish, layer the sliced beets, golden sweet potatoes, and orange sweet potatoes/yams, seasoning lightly with salt and pepper between layers.
- Drizzle the layers generously with maple syrup.
- Top with shredded Gruyere cheese and crispy fried shallots.
- Cover with foil and bake for 40 minutes.
- Remove the foil and bake for an additional 20 minutes or until the top is golden and bubbly.
- Let cool for a few minutes before serving.
Notes
Slice vegetables evenly for even cooking. For a lighter version, consider using low-fat cheese.
