Ingredients

Scale
  • 1 head of cauliflower, cut into florets
  • 2 tablespoons maple syrup
  • 1 tablespoon Sriracha sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, whisk together maple syrup, Sriracha, olive oil, salt, and pepper.
  3. Toss the cauliflower florets in the mixture until well coated.
  4. Spread the cauliflower on a baking sheet in a single layer.
  5. Roast in the oven for 20-25 minutes, or until golden and tender, stirring halfway through.
  6. Remove from the oven and garnish with chopped green onions before serving.

Notes

For a milder flavor, swap Sriracha for another hot sauce. Vegetable leftovers can be stored in the fridge and reheated for an easy lunch the next day.
