Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup chopped parsley (optional)
  • 1/4 cup milk
  • 1/4 cup ketchup (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, minced garlic, egg, Italian seasoning, salt, pepper, and milk.
  3. Mix gently until combined.
  4. Form the mixture into a loaf shape and place it in a baking dish.
  5. Spread ketchup over the top of the meatloaf.
  6. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let it rest for 10 minutes before slicing.
  8. Serve with your choice of sides.

For a gluten-free option, use certified gluten-free breadcrumbs. Ensure to check internal temperature with an instant-read thermometer.
