Ingredients

  • 1 pound ground beef or pork
  • 1/2 cup rice
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup carrots, chopped
  • 1 cup zucchini, diced
  • 1/2 cup fresh cilantro, chopped
  • 2 teaspoons cumin
  • 1 teaspoon chili powder

Instructions

  1. In a large bowl, combine ground meat, rice, chopped onion, minced garlic, egg, salt, and pepper. Mix well and form into meatballs.
  2. In a large pot, heat beef broth and diced tomatoes over medium heat.
  3. Add the meatballs to the pot, along with carrots, zucchini, cumin, and chili powder.
  4. Simmer for about 30 minutes or until the meatballs are cooked through and vegetables are tender.
  5. Stir in chopped cilantro before serving.
  6. Enjoy warm.

Notes

Use fresh herbs to brighten the flavor. For a spicier kick, add extra chili powder or fresh jalapeños.
