- 1 pound ground beef or pork
- 1/2 cup rice
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 egg
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup carrots, chopped
- 1 cup zucchini, diced
- 1/2 cup fresh cilantro, chopped
- 2 teaspoons cumin
- 1 teaspoon chili powder
Instructions
- In a large bowl, combine ground meat, rice, chopped onion, minced garlic, egg, salt, and pepper. Mix well and form into meatballs.
- In a large pot, heat beef broth and diced tomatoes over medium heat.
- Add the meatballs to the pot, along with carrots, zucchini, cumin, and chili powder.
- Simmer for about 30 minutes or until the meatballs are cooked through and vegetables are tender.
- Stir in chopped cilantro before serving.
- Enjoy warm.
Notes
Use fresh herbs to brighten the flavor. For a spicier kick, add extra chili powder or fresh jalapeños.
