Ingredients

  • 2 chicken breasts
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 5-7 minutes per side.
  2. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and sliced mushrooms, cooking until the mushrooms are tender.
  4. Pour in the heavy cream and stir until combined.
  5. Return the chicken to the skillet, cooking for an additional 2-3 minutes until heated through.
  6. Serve with mashed potatoes and garnish with fresh parsley.

Notes

For a lighter sauce, substitute half-and-half for heavy cream. Ensure chicken is patted dry for a better sear.
