- 2 chicken breasts
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 5-7 minutes per side.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sliced mushrooms, cooking until the mushrooms are tender.
- Pour in the heavy cream and stir until combined.
- Return the chicken to the skillet, cooking for an additional 2-3 minutes until heated through.
- Serve with mashed potatoes and garnish with fresh parsley.
Notes
For a lighter sauce, substitute half-and-half for heavy cream. Ensure chicken is patted dry for a better sear.
