- 1 cup shredded coconut
- 1/2 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup crushed graham crackers
- 1/4 cup chopped nuts (optional)
Instructions
- In a mixing bowl, combine the cream cheese, powdered sugar, and vanilla extract until smooth.
- Stir in the shredded coconut and crushed graham crackers until well mixed.
- If desired, fold in chopped nuts.
- Once combined, roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Refrigerate for about 30 minutes to set.
- Serve chilled.
Notes
For a richer finish, substitute half the cream cheese with mascarpone. To make the recipe vegan, replace cream cheese with a firm blended tofu or coconut-based soft cheese.
