- 2 Chicken Breasts
- 1 cup Artichokes, chopped
- 1 cup Tomatoes, diced
- 1 cup Zucchini, sliced
- 1 teaspoon Dried Basil
- 1 cup Mozzarella Cheese, shredded
- Salt and Pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- In a casserole dish, arrange the chicken breasts.
- Season the chicken with salt, pepper, and dried basil.
- Add the chopped artichokes, diced tomatoes, and sliced zucchini on top of the chicken.
- Drizzle olive oil over the vegetables and chicken.
- Top the dish with shredded mozzarella cheese.
- Bake in the preheated oven for about 30 minutes, or until the chicken is cooked through and the cheese is bubbly.
- Let the dish rest for 5 minutes before serving warm.
Notes
For a lighter option, serve over sautéed greens instead of grains. Use part-skim mozzarella to reduce fat and a drizzle of olive oil to enhance flavors.
