Delicious mini pancakes with crisp edges and silky interiors, perfect for a quick and comforting treat.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Optional toppings: syrup, fruit, whipped cream

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, egg, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill each muffin tin cup about 2/3 full with batter.
  6. Bake for 10-12 minutes or until a toothpick comes out clean.
  7. Let cool for a few minutes before removing from the tin.
  8. Serve warm with your choice of toppings.

Notes

Use room-temperature ingredients for better batter emulsification. Don’t overmix to maintain a tender crumb.
