Ingredients

  • 1 pie crust
  • 1 cup peanut butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1/4 cup corn syrup
  • 1/4 cup heavy cream
  • 1 cup roasted peanuts
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Roll out the pie crust and fit it into a pie dish. Bake according to package instructions until golden brown.
  2. In a saucepan, combine the granulated sugar, brown sugar, corn syrup, heavy cream, and salt. Cook over medium heat until the sugars dissolve and the mixture comes to a boil, stirring constantly. Remove from heat and stir in peanut butter and vanilla until smooth.
  3. Stir in the roasted peanuts until well combined.
  4. Pour the peanut butter mixture into the baked pie crust and spread evenly.
  5. Allow to cool to room temperature, then refrigerate for at least 2 hours before serving.

Notes

For a healthier version, consider using less sugar and natural peanut butter. Serve with vanilla ice cream or a side of fresh fruit salad.
