- 1 pie crust
- 1 cup peanut butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 1/4 cup corn syrup
- 1/4 cup heavy cream
- 1 cup roasted peanuts
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Roll out the pie crust and fit it into a pie dish. Bake according to package instructions until golden brown.
- In a saucepan, combine the granulated sugar, brown sugar, corn syrup, heavy cream, and salt. Cook over medium heat until the sugars dissolve and the mixture comes to a boil, stirring constantly. Remove from heat and stir in peanut butter and vanilla until smooth.
- Stir in the roasted peanuts until well combined.
- Pour the peanut butter mixture into the baked pie crust and spread evenly.
- Allow to cool to room temperature, then refrigerate for at least 2 hours before serving.
Notes
For a healthier version, consider using less sugar and natural peanut butter. Serve with vanilla ice cream or a side of fresh fruit salad.
