- 1 cup packed light brown sugar
- 1/2 cup all-purpose flour
- 2 cups chopped pecans
- 2/3 cup butter, softened
- 2 eggs, beaten
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and brown sugar until the mixture is light and fluffy.
- Add the beaten eggs and mix until well combined.
- Gradually stir in the flour until just incorporated.
- Gently fold in the chopped pecans.
- Spoon the batter into a greased muffin tin, filling each cup about two-thirds full.
- Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before removing from the tin.
Notes
For a gluten-free version, use gluten-free flour. Consider using maple syrup or honey instead of brown sugar for a different flavor.
