A golden artisan loaf speckled with parmesan and fresh herbs, sliced to show an airy crumb and crisp crust.

Ingredients

  • 3 1/4 cups (390g) all-purpose flour
  • 2 teaspoons (10g) salt
  • 1 teaspoon (5g) granulated sugar
  • 2 teaspoons (7g) active dry yeast
  • 1 1/2 cups (360ml) warm water (around 110°F/43°C)
  • 2 tablespoons (30ml) olive oil
  • 1 cup (100g) freshly grated parmesan cheese
  • 23 cloves of minced garlic
  • 1 tablespoon (15g) chopped fresh rosemary or parsley (optional)

Instructions

  1. In a large mixing bowl, combine the flour, salt, and granulated sugar.
  2. In a small bowl, dissolve the active dry yeast in warm water and let it sit until foamy.
  3. Pour the yeast mixture into the dry ingredients, add olive oil, and mix until combined.
  4. Fold in parmesan cheese and garlic, adding herbs if desired.
  5. Cover and let the dough rise in a warm place for 12–18 hours.
  6. Shape the risen dough into a round loaf and let it rest while preheating the oven.
  7. Score the top of the dough and bake in a preheated Dutch oven for 30 minutes, covered.
  8. Remove the lid and bake for an additional 15 minutes until golden brown.
  9. Cool on a rack for at least 30 minutes before slicing.

Notes

Use freshly grated parmesan for best results. Keep dough sticky to achieve desired texture.
