- 3 1/4 cups (390g) all-purpose flour
- 2 teaspoons (10g) salt
- 1 teaspoon (5g) granulated sugar
- 2 teaspoons (7g) active dry yeast
- 1 1/2 cups (360ml) warm water (around 110°F/43°C)
- 2 tablespoons (30ml) olive oil
- 1 cup (100g) freshly grated parmesan cheese
- 2–3 cloves of minced garlic
- 1 tablespoon (15g) chopped fresh rosemary or parsley (optional)
Instructions
- In a large mixing bowl, combine the flour, salt, and granulated sugar.
- In a small bowl, dissolve the active dry yeast in warm water and let it sit until foamy.
- Pour the yeast mixture into the dry ingredients, add olive oil, and mix until combined.
- Fold in parmesan cheese and garlic, adding herbs if desired.
- Cover and let the dough rise in a warm place for 12–18 hours.
- Shape the risen dough into a round loaf and let it rest while preheating the oven.
- Score the top of the dough and bake in a preheated Dutch oven for 30 minutes, covered.
- Remove the lid and bake for an additional 15 minutes until golden brown.
- Cool on a rack for at least 30 minutes before slicing.
Notes
Use freshly grated parmesan for best results. Keep dough sticky to achieve desired texture.
