A delightful blend of bright cherries and nutty pistachios in a soft, silky bread, topped with a glossy almond glaze.

Ingredients

  • 1 box of cake mix (pistachio flavor)
  • 1 package of pistachio pudding mix
  • 3 large eggs
  • 1 cup of water
  • 1/2 cup of vegetable oil
  • 1 cup of maraschino cherries, chopped
  • 1/2 cup of almonds, chopped
  • 1 cup of powdered sugar (for glaze)
  • 2-3 tablespoons of almond extract (for glaze)
  • 1-2 tablespoons of milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the cake mix, pistachio pudding mix, eggs, water, and vegetable oil. Mix until smooth.
  3. Fold in the chopped maraschino cherries and chopped almonds.
  4. Pour the batter into the prepared loaf pan.
  5. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the bread to cool completely in the pan on a wire rack.
  7. For the glaze, mix powdered sugar, almond extract, and milk in a bowl until smooth and drizzle over the cooled bread before serving.

Notes

Use room temperature eggs and measured liquids for best results. Cool completely before glazing.
