- 1 cup heavy cream
- 1/2 cup pistachio puree
- 1/4 cup sugar
- 2 egg whites
- 1/2 teaspoon vanilla extract
- 1 cup dark chocolate, chopped
- 1/2 cup heavy cream (for ganache)
- Pinch of salt
Instructions
- In a bowl, whip the 1 cup of heavy cream until soft peaks form.
- In another bowl, combine pistachio puree, sugar, egg whites, and vanilla extract.
- Gently fold the whipped cream into the pistachio mixture until fully combined.
- To prepare the ganache, heat 1/2 cup of heavy cream and pour it over the chopped dark chocolate in a separate bowl. Stir until smooth and glossy.
- Layer pistachio mousse in individual cups and top with chocolate ganache.
- Chill in the refrigerator for at least 120 minutes before serving.
Notes
Work with cold heavy cream for faster, more stable whipping. Serve in clear glassware to showcase the layers.
