  • 1 box pistachio pudding mix
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pistachios
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the softened butter, granulated sugar, and brown sugar until creamy.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. Stir in the pistachio pudding mix until fully incorporated.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  7. Fold in the chopped pistachios and white chocolate chips.
  8. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until edges are lightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a lighter version, consider using whole wheat flour or substituting coconut oil for butter.
