- 1 cup rolled oats
- 1 cup pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup honey or maple syrup
- 1/4 cup almond butter or peanut butter
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a mixing bowl, combine rolled oats, pumpkin puree, brown sugar, honey (or maple syrup), almond butter (or peanut butter), cinnamon, nutmeg, salt, and baking powder. Mix well until all ingredients are combined.
- If using, fold in the chopped nuts or chocolate chips.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Notes
Press the mixture evenly into the pan and do not overbake to keep bars tender. Store in the refrigerator for up to four days or freeze for up to two months.
