- 1 cup pumpkin puree
- 1/2 cup peanut butter
- 1/2 cup honey or maple syrup
- 1 cup oats
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a large bowl, mix the pumpkin puree, peanut butter, honey or maple syrup, and vanilla extract until well combined.
- In another bowl, combine the oats, cinnamon, baking powder, and salt.
- Gradually mix the dry ingredients into the wet ingredients until everything is well incorporated. If using, fold in the chocolate chips.
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into bars and serving.
Notes
Ensure your pumpkin puree is thick and fresh for the best texture. Allow bars to cool completely before slicing for easier cuts.
