  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 3 medium beets, peeled and sliced
  • 3 large carrots, peeled and sliced
  • 2 tbsp olive oil
  • Burrata cheese
  • Salt and pepper, to taste
  • Fresh herbs (such as basil or parsley) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sliced beets and carrots with olive oil, salt, and pepper.
  3. Spread the vegetables on a baking sheet in a single layer.
  4. Roast in the oven for 25-30 minutes or until tender, stirring halfway through.
  5. Once cooked, remove from the oven and let cool slightly.
  6. On a serving platter, arrange the roasted beets and carrots, topping them with burrata cheese.
  7. Garnish with fresh herbs and serve warm or at room temperature.

Notes

Slice vegetables evenly to ensure even cooking and avoid overcrowding the baking sheet for better caramelization.
