Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sliced beets and carrots with olive oil, salt, and pepper.
- Spread the vegetables on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes or until tender, stirring halfway through.
- Once cooked, remove from the oven and let cool slightly.
- On a serving platter, arrange the roasted beets and carrots, topping them with burrata cheese.
- Garnish with fresh herbs and serve warm or at room temperature.
