- 1 pound of baby carrots or halved standard carrots
- 2 tablespoons of fruity olive oil
- 1 teaspoon of smoked paprika
- 1 cup of ricotta cheese
- 1-2 tablespoons of hot honey
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the carrots with the olive oil, smoked paprika, salt, and pepper until evenly coated.
- Spread the seasoned carrots on a baking sheet in a single layer. Roast for about 20-25 minutes, or until tender and caramelized, turning halfway through.
- While the carrots are roasting, whip the ricotta cheese in a bowl until creamy and smooth.
- Once the carrots are roasted, let them cool slightly, then serve on a platter beside the whipped ricotta, drizzling hot honey on top.
Notes
For a stunning presentation, consider using heirloom or rainbow carrots. Can also substitute ricotta with dairy-free alternatives for a vegan option.
