Ingredients

  • 2 large sweet potatoes
  • 4 oz goat cheese
  • 2 tbsp heavy cream
  • 1/2 cup cranberries (fresh or dried)
  • 1/2 cup pecans
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice sweet potatoes into rounds and toss with olive oil, salt, and pepper.
  3. Arrange sweet potato rounds on a baking sheet in a single layer.
  4. Roast for about 25-30 minutes, flipping halfway through until tender and slightly caramelized.
  5. Meanwhile, whip goat cheese with heavy cream until smooth.
  6. Once sweet potatoes are roasted, let cool slightly.
  7. Top each sweet potato round with a dollop of whipped goat cheese, a sprinkle of cranberries, and chopped pecans.
  8. Serve warm and enjoy!

Notes

For added sweetness, drizzle a little honey over the top just before serving. Substitute cream cheese for a milder flavor.
